Kangongo is a factory under the Baragwi Farmers Cooperative Society (FCS), one of the biggest FCS's in Kenya. This cooperative has a unique program where factory managers rotate and work at another factory every two years as a way to gain and share best practices within the community. Experiential learning through this program has improved the quality of the coffees produced by these factories and has created a channel for knowledge to circulate among the members. Smallholders around the area deliver ripe cherries to the factory during harvest. Upon arrival, the coffees are sorted and passed through a depulping machine that removes the skin and pulp off the cherries. After this process, the coffees are graded by density into 3 grades. The top 1 and 2 grade coffees are processed separately and fermented for 16- 24 hours under cover. After washing the coffees in clean channels, they are soaked with local spring water for another 16-18 hours. Finally, the coffees are dried and manually rotated on raised beds for another 21 days. The resulting coffee is distinctly sweet, clear, and sparkly.
