This natural processed decaf coffee consists of several smallholder lots from farms located in the Acevedo, Algerias, and Timaná municipalities of Huila. Upon harvest, cherries at these farms are carefully selected for ripeness before being transferred to a local mill for processing. At the mill, cherries are floated in water tanks and hand sorted by workers to remove defects and overripe fruit. The remaining cherries are then moved to covered patios to dry for 10-45 days. The resulting flavour profile you can expect from this coffee includes dried fruit, warm spice, and chocolate- like flavour attributes.
